Limited-Time Ankh Tasting Menu Revealed by Aqua

Aqua, a renowned Italian-Japanese restaurant, has unveiled a limited-time tasting menu called Ankh, showcasing the harmonious blend of Italian and Japanese cuisines. This unique dining experience features seven courses that highlight the best of both culinary traditions, with Italian dishes paired with Japanese sake and Japanese dishes complemented by Italian wines.

The Ankh tasting menu takes inspiration from the ancient Egyptian symbol for the key of life, symbolizing Aqua’s motto of “where there’s water, there’s life.” This menu reflects the restaurant’s innovative approach to combining Italian and Japanese flavors, offering a gastronomic journey that is both exciting and delicious.

Both Italian and Japanese cuisines are known for their emphasis on simplicity and the use of high-quality ingredients. The Ankh tasting menu showcases the compatibility of these two culinary styles by expertly pairing Italian wines with Japanese dishes and Japanese sake with Italian creations. The collaboration between Chef Iwahashi Tatsuya from the Japanese kitchen and Chef Ilaria Zamperlin from the Italian kitchen results in a menu that is truly one-of-a-kind.

The journey through the Ankh tasting menu begins with a Bluefin Tuna Tartare with Crystal Dashi and Caviar, followed by an Alaskan King Crab dish from the Italian kitchen. The menu continues with a Somen Noodle featuring Seared Scallop, Hotaru-Ika Baby Squid, and Salmon Roe, as well as a Homemade Lobster Ravioli with Tomato Water Infused with Plankton and Mediterranean Herbs.

For the main course, diners can choose between a Charcoal Grilled Saikyo Miso Marinated Black Cod or a Chilli Teriyaki Lamb with Yuzu, Garlic, and Miso. The meal concludes with a delicate Raindrop Cake and a tailored Sgroppino dessert, offering a sweet and refreshing end to the dining experience.

The Ankh tasting menu is available at Aqua for dinner until June 23, priced at HK$1188 per person. Guests can also opt for the wine and sake pairing for an additional HK$788 per person. To reserve a table and experience this unique culinary journey, diners can book online.
