Foodservice operators are facing a new challenge as younger consumers are becoming more discerning about the information they receive regarding health and wellness. In a panel discussion at the National Restaurant Show titled “Better Foods for Customers=Better Business for You,” industry experts emphasized the importance of providing accurate information and catering to the diverse dietary choices of customers.

Participants in the panel, including industry veteran Carin Stutz and George Madzhirov, founder of HandCut Foods, highlighted the need for transparency and authenticity in menu offerings. Consumers, especially GenZ members, are increasingly relying on their own bodies to determine what they should be eating, rather than following traditional dietary guidelines.

Lizzy Freier, director for menu research and insights at Technomic, pointed out that modern consumers are looking for ingredients and menu items that are environmentally friendly and sustainable. The focus has shifted from simply removing unhealthy ingredients to incorporating functional ingredients that can enhance the overall dining experience.

The panelists also stressed the importance of clean ingredients and eliminating artificial additives from food products. Stutz, who previously led vegan chain Native Foods, emphasized the need for the foodservice industry to demand cleaner ingredients from suppliers.
